Savoury Loaf

Meal idea: Savoury Olive & Cheese loaf served alongside baked Salmon and a simple Green Salad.

WHAT YOU NEED

  • 150ml White Wine

  • 1/2 cup Olive Oil

  • 4 Eggs

  • 1/2 tp Salt

  • 3 cups Self-raising flour

  • 150g Grated Cheese

  • 1 large Onion - diced

  • 1 cup Sun-dried Tomatoes - chopped

  • 50g Black Olives - sliced

  • 50g Green Olives - sliced

  • 1/2 cup Fresh Parsley - chopped

Optional.

  • Bacon and/or Ham diced

WHAT YOU DO

  • Preheat oven 360°F (180°C)

  • Butter and flour loaf pan

  • Chop the onion finely

  • Sauté onion in a skillet (with bacon if desired) until the onion is translucent and the bacon is cooked. TIP: If available, use some of the Oil from the Sun-dried Tomatoes to cook the onion

  • Drain onion (and beacon) and place on paper towel to absorb any cooking fat. Set aside to cool

  • Slice Olives

  • Chop Parsley

  • Chop Sun-dried Tomatoes

  • In a large bowl, whisk together the Wine, Oil, Eggs, and Salt.

  • Sift flour and stir into the liquid preparation.

  • Add all other ingredients and grated cheese to the basic preparation and mix.

  • Pour into loaf pan

  • Bake for 1 hour
