Savoury Loaf
Meal idea: Savoury Olive & Cheese loaf served alongside baked Salmon and a simple Green Salad.
WHAT YOU NEED
150ml White Wine
1/2 cup Olive Oil
4 Eggs
1/2 tp Salt
3 cups Self-raising flour
150g Grated Cheese
1 large Onion - diced
1 cup Sun-dried Tomatoes - chopped
50g Black Olives - sliced
50g Green Olives - sliced
1/2 cup Fresh Parsley - chopped
Optional.
Bacon and/or Ham diced
WHAT YOU DO
Preheat oven 360°F (180°C)
Butter and flour loaf pan
Chop the onion finely
Sauté onion in a skillet (with bacon if desired) until the onion is translucent and the bacon is cooked. TIP: If available, use some of the Oil from the Sun-dried Tomatoes to cook the onion
Drain onion (and beacon) and place on paper towel to absorb any cooking fat. Set aside to cool
Slice Olives
Chop Parsley
Chop Sun-dried Tomatoes
In a large bowl, whisk together the Wine, Oil, Eggs, and Salt.
Sift flour and stir into the liquid preparation.
Add all other ingredients and grated cheese to the basic preparation and mix.
Pour into loaf pan
Bake for 1 hour
