Wholemeal Bread

Idea: Keeps well in freezer

WHAT YOU NEED

  • 600 g wheat wholemeal flour

  • 600 ml tepid water

  • 1 - 2 tsp. salt

  • 1 tbs. honey

  • 2 - 3 tbs. lemon juice or vinegar

  • 1 sachet dry yeast (= 2 levelled tsp.)

  • Whole Rolled oats

  • Nuts &, Seeds of your choice... example: Sunflower seeds, pumpkin seeds, Linseeds, nuts.

WHAT YOU DO

  1. Mix water, salt, honey, lemon juice and yeast.

  2. Stir in seeds and flour (whatever you like, e.g. sunflower seeds, pumpkin seeds, linseeds, nuts...) set aside for 5 minutes.

  3. Grease a loaf tin.

  4. Spread some seeds or rolled oats at the bottom, fill in the dough and sprinkle the top with rolled oats.

  5. Put the loaf tin in the cold oven and also put in a small bowl with boiling water underneath it (bottom of the oven).

  6. Bake at 210°C (fan bake) for 60 minutes

  7. (You can tell if it's cooked by tapping its bottom - if it sounds hollow it's done, if it doesn't then pop it back in for a little longer).
